Things have been tweaked, prep has been done so we are going to give the little naranja another lash on the Dun Laoghaire pavilion tomorrow from 4pm.

One of the first tacos most of our initial customers fell in love with. Our take on a guisado or stew style taco.

Here we slow cook some pork shoulder with gochujang, doenjang, tamari, oranges, limes, onions, garlic and ginger.

Pull it and serve with our house kimchi...

Here we have it with some black bean purèe, a jalapeno tomatillo salsa, feta and some cashews.
